Baking weather....

Bacon-cheddar scones
Ingredients:
3 cups all purpose flour, 1 T baking powder, 1 t black pepper, 8 T ( one stick) of salted butter-cold and cut into cubes, 1 1/2 cups cheddar cheese- shredded, 1/4 cup sweet onion ( or green onion) finely diced, 10 slices of bacon cooked and chopped,1 cup buttermilk ( more if needed- up to 1/2 cup)
For egg wash: 1 egg- beaten + 2 T water
DIRECTIONS:
Preheat over to 400. In a bowl, combine flour, baking powder, and pepper.  ADD the cubes of butter, mixing on low until the butter looks like sm. peas. and mixture is crumbly. ADD the grated cheese and mix just until incorporated.  MIX IN onion, bacon, and 1 cup of buttermilk. BY HAND, stir until it comes together.  ADD more buttermilk if needed- 1 T at a time) TRANSFER the dough to a floured surface and shape into an 8 " round. CUT into 10 wedges and apply the egg wash.  Separate the wedges and place on a silpat covered sheet.  Bake for 18 mins.
